Dim Sum Stuffed Green Peppers

Dim Sum Green Peppers stuffed with shrimp

Anyone else missing dim sum these days?

In honour of St. Patrick’s Day and Dietitians’ Day in Canada, here’s my recipe for Dim Sum Stuffed Green Peppers.

Ingredients:

Filling

340 g shrimp, shelled and de-veined

2 green onions sliced, plus extra for garnish

1 tsp sesame oil

1 tsp salt

1½ tbsp cornstarch plus more for dusting

3-4 green bell peppers

1 T oil

Sauce

½ cup chicken broth or water

½ tbsp oyster sauce

½ tbsp soy sauce

2 tsp corn starch

1½ tbsp water

Directions

  1. Finely mince the shrimp to create a paste. (As you mince the shrimp, push it into a pile and continue to mince. Repeat this about 10 times until you get a paste. Or you can use a food processor.
  2. In a bowl, add shrimp paste, chopped green onions, sesame oil, salt and cornstarch. Mix well.
  3. Cut each green pepper into quarters (or more pieces, if the pepper is large). Remove the seeds. To help the peppers lie flat when cooking, trim off the curved ends. (Save the ends for a stir-fry, soup or salad…or enjoy them as a snack!)
  4. Dust each piece of green pepper with cornstarch. Chef Mah’s (aka my dad’s) tip: This helps the filling stick to the green pepper.
  5. Spoon in the shrimp filling.
  6. Heat oil in a skillet on medium-high heat. Cook peppers, stuffing side down for a few minutes until browned.
  7. Turn peppers over and cook for another few minutes.
  8. Add 2 T water and steam for a couple of minutes until peppers are tender. Remove lid and continue cooking until all water has evaporated.
  9. To make the sauce, add broth (or water), oyster sauce and soy sauce in a small saucepan. Bring to a gentle boil and reduce to simmer. In a small bowl, mix the cornstarch and water to create a slurry. Gradually whisk the slurry into the sauce until it thickens.
  10. Garnish stuffed peppers with remaining green onions, and serve with sauce. Enjoy!
