BLT Breakfast Salad

Ingredients
Salad

cooked barley

cups
romaine lettuce, chopped

cup
grape tomatoes, sliced

cup
cucumbers, diced

hard cooked eggs, sliced
Dressing
2
Tbsp
canola oil
2
Tbsp
cider vinegar
1
Tbsp
lemon juice
salt and pepper to taste
Instructions
In a large bowl, combine barley and veggies.
In a small bowl, whisk together dressing ingrdients.
Drizzle dressing over salad and toss.
Top with sliced eggs.
